However, after reading the reviews I decided to give this little guy a chance. I'm willing to spend $40 on a paring knife, but I can certainly spend a few bucks to see if I like this one more. I'm so glad I did - this knife lives up to the all the other glowing reviews. It comes sharp out of the box and has stayed that way with very little decline in my time using it. The handle is comfortable enough in my hand (I'm right handed, but it's symmetrical so a lefty would also find it easy to use). The blade holds up to tough use but is slightly flexible so it feels more like an extension of my hand. The best part is the price! Great performance for 1/3 to 1/5 the price of comparable products. That's a winner in my book. If there is a negative, perhaps I would prefer that it had a little more heft. If weight is very, very important to you, go give an all-metal Global a try. Otherwise, pick up one of these knives and get a great product for a fraction of the cost of another paring knife.

And the fact that it's so cheap is just the icing on the cake. You won't regret this purchase

I am writing this review after two full years of using this knife, and it hasn't let me down yet! I am a three knife kind of guy: one chefs knife, one bread knife, and one paring knife. It keeps my kitchen uncluttered, simple, and most importantly costs less money. That being said, I put more value in quality than price - my daily chef knife has been the $150 MAC Pro for years. When I first started looking for a paring knife, of course I was attracted to the big names like Wüsthof, Global, and Henkels. However, after reading the reviews I decided to give this little guy a chance. I'm willing to spend $40 on a paring knife, but I can certainly spend a few bucks to see if I like this one more. I'm so glad I did - this knife lives up to the all the other glowing reviews. It comes sharp out of the box and has stayed that way with very little decline in my time using it. The handle is comfortable enough in my hand (I'm right handed, but it's symmetrical so a lefty would also find it easy to use). It performs well on the board, but it does lose the razor sharp edge rather quickly which makes re-honing the edge necessary between tasks or even during tasks. However, this knife is so sharp that you can forego the board and work in the air above your bowl if you want, with complete control and confidence You'll have to re-evaluate how you cut vegetables when you use this knife at it's proper sharpness because a whole world of possibilities opens up. ### ⭐⭐⭐⭐⭐ I use this more than my Wustoff paring knife...

This knife is sharp and light-weight, with the perfect size blade for paring. It's a pleasure to use: it's perfectly balanced, and the lighter weight and slightly smaller size makes it more agile and easy to angle and manipulate than my more expensive paring knife. I can peel just the skin or pith off of things, without cutting into the fruit or veggie at hand, I can remove membranes off grapefruit slices and oranges, and cut salami, hard and semi-soft cheese and/or butter wafter-thin. It's a convenient size to pack in a picnic lunch too, although I wish it had a sheath. I am considering buying a few more, so I don't have to constantly wash it after each use, and carefully put it back in the same slot of my knife block, so I am not searching for it, or grab my Wustoff knife by mistake! I am also looking at buying a full knife set from this line, even though I already have a complete (and expensive) one. I plan to do a little research to see if all the knives in this line are as good. I can't believe this product isn't better known. If I hadn't seen this reviewed on "Cook's Country", I never would have heard about it. Probably because it is sooo inexpensive.
