Review: My liege! (Waffles, that is) - I was extremely happy to find Waffle Pantry's products on desertcart. Originally, I intended to only buy their pearl sugar. After trying to locate yeast, I changed my plan and purchased this kit. Very happy I did. The directions on the mix package were short, sweet and to the point. No kneading time was listed so I fell back on previous experience and used my stand mixer, with dough hook, on 2 for 6 minutes. Then oiled the resulting sticky dough and let it rise in my electric pressure cooker (yogurt setting) on low, for an hour. Punched it down, added the sugar, folded in, divided and let it rest in the cooker (off) for another 15 minutes. Rather that cook my waffles one at a time, in the center of the oiled iron, I opted to cook two at a shot. 2 1/2 minutes was long enough to cook through but did make them a bit dark, especially where the sugar pearls melted. Cleaning in between cooks was crucial! Happy to have a supply baked up for breakfast all week long. Have been reheating for a couple of minutes in my air fryer. Soooo delicious! Now, to shop desertcart for a waffle iron with a thermostat I can control....

**Q: Can i keep the finished dough in the fridge until the next day to cook waffles?**
A: Yes, you absolutely can refrigerate the dough. Once the dough has risen, poke a few holes into the dough and allow the gases to escape. Cover the dough up with plastic wrap and refrigerate to use the next day. We recommend that you wait until you're ready to bake up the waffles before incorporating the pearl sugar into the dough. This allows the pearl sugar to maintain its freshness and shape rather than over-activate the yeast and dissolve overnight. **Q: What is pearl sugar?   How different is it from powdered or icing sugar?  I’m American and have never heard of these waffles.....**
A: It’s like little balls of sugar that melt down in little pockets when mixed and cooked with a waffle maker.  Instead of having sprinkled sugar on top like you would use powdered sugar, this pearl sugar creates these little pockets of sugar you can taste when eating a waffle. I was in Belgium and had a Belgian waffle and this is the exact same taste and texture! So sweet and delicious!

**Q: Once all the yeast packets are used can I use any brand of yeast? Or does it need to be a specific one?**
A: If you follow the Liege waffle mix preparation instructions, the yeast provided to you should be exactly how much you will need for the 32 ounce bag of waffle mix. This recipe is so easy to use and sooo tasty! I have purchased this many times for Saturday waffles with friends or family and it never disappoints. It doesn't need any syrup or anything because of the pearl sugar, but it does pair well with whipped cream or fruit!
