Our family has really gotten into banchan, so I can make fresh small batches as needed just by reducing the recipes. You can also adjust the recipes to your family's tastes, such as I will reduce the sugar and/or salt in most recipes (not just in this cookbook), and it doesn't affect the end result. I have yet to try making the kimbap - those sushi-like rolls - because I haven't gotten around to buying a bamboo mat to make the rolls, but I'm looking forward to making them soon for summer picnics.
