Hand-forged Japanese style Nakiri - vegetable knife. You may use this knife for detailed cutting. About Tanegashima Knives: Knives and scissors made in Tanegashima are famous traditional handicrafts in Japan. Craftsmen have kept alive traditional techniques for forging and sharpening iron tools. Certified as a Dentou-kougei product of cultural and historical significance by the Kagoshima Prefectural Government. About Tanegashima Ikenami Cutlery Ltd.: Ikenami has had insistence on high-quality workmanship and forged Tanegashima knives and scissors with traditional forging technique over the ages. They are always think about end-users and anxious to pamper customers' needs. They proudly introduce their painstaking craftsmanship to overseas customers. ONLY two families are still doing knife and scissor businesses in Tanegashima, and Ikenami is one of them. Please remember that this is carbon steel, NOT stainless steel, so it will rust if you do not take proper care. About Aoshi No. 2 Steel (Carbon Steel): Aoshi No. 2 steel is one the YSS steel. Amount of carbon contained in the steel is 1.05 ~1.15%. The high containing carbon makes the knife really sharp. Aoshi No. 2 Steel contains 0.20 ~0.50 of Cr (Chromium) and 1.00 ~1.50 of W (Tungsten). Cr and W are ones of the hardest metals and make the edge incredibly hard and sharp.
