I washed the pot and lid by hand very well with warm soapy water; running my hand over all surfaces to ensure I could not feel any manufacturing residue; then ran it through the dishwasher to be doubly sure all residue was gone. Cooked a Mediterranean casserole in it - browned the meat on the stovetop, added spices and vegetables, put on the lid, placed in the oven for an hour. Well, no sticking and the casserole is fabulous. Cleanup is fast and easy. I will be replacing other pots with Heritage steel. It is also a work of art! I was trying to purge my house of Teflon and consolidate the number of different types of cooking vessels crowding my cabinets. I debated between this and an enamel coated dutch oven, but my other enamelware always chipped so I went for the stainless. The pot is really well made and I love that is has titanium in the stainless. The size makes it really useful for many purposes. I had hoped it could also replace my teflon sauteuse, but I found I still needed something larger and flatter. Still, this works for chili, stews, curries, pasta dishes and I have yet to use it in the oven but I'm sure I will soon. It cleans as any stainless, which is to say if you want it shiny, using a bit if barkeeper's friend is the way to go. Let's face it, nothing cleans as easy as teflon, but at least this pot isn't killing me and I won't have to replace it in 2 years because it's flaking into my food. Light enough to handle by just the long handle, heats at least as even as our thick cast iron pans, was quite non-stick first try, browns evenly and well, corner radii fit our utensils well, etc. The performance isn't all - the fit and finish and overall look are just great. Perfect for rissotto.
