First time take me 5 days , second time in less than 4 days probably because I put fresh garlic from Gilroy the capitol of garlic . This it’s my third time with the same garlic so I will wait for seven days to see the difference between 4 and 7 days . Hopefully this will help you . Buyers don’t think it’s not going to work , it works great . I have it inside the house as well no bad smells .

Very easy to use my third time making a full basket of black garlic , my husband love to eat them . A friend gave me a lot of her black garlic, excellent, but a different fermenter. So I waited 4 months before to use mine :( . Wrong. Now I can't return the fermenter.
