Paramount Crystals 4 oz. Used to aid in melting chocolate, carob, candy melts and yogurt coatings. Helps make coatings smooth and easier to pour into molds. Paramount Crystals are Gluten Free, Kosher, Salt free and Sugar free! Ingredients: Hydrogenated palm kernel oil, mono and diglycerides, soy lecithin. DIRECTIONS FOR USE: Use 1 tsp (or as needed) of Paramount Crystals for every 2 cups chocolate, carob, candy melts, or yogurt coatings. Put chocolate in heatproof bowl that fits snugly over a pot of barely simmering water. Stir occasionally. To thin chocolate for molding, dipping or drizzling, add paramount crystals slowly until desired consistency is achieved. NOTE: Never heat chocolate over 115°F, as it will burn. Storage: Should be stored cool and dry. Net Weight: 4 oz.

Review: First time user - worked like it should - First, these arrived with a few other items from desertcart on a hot summer day and I was not home to get the package inside. Even so, the crystals had only begun to melt together in its bag by the time I opened the box, and the crystals were still very usable. I have melted chocolate quite a bit over the years and never heard of paramount crystals until recently. Had used shortening to thin chocolate when needed but usually used melting wafers. I bought these crystals and put a bit in with melting wafers to thin just a small amount for a specific dessert item. To be honest, I didn't measure the amount I used. I just put a pinch at a time in the chocolate until I got the consistency I wanted. For such a small amount of chocolate (maybe a 1/4 cup at the most) I thought it took more of the crystals than it should have. I didn't notice any change in taste or texture/smoothness of the chocolate, no aftertaste or feeling of my mouth being coated with shortening. They melt easily and quickly, especially in your hands!, and feel like shortening.

First, these arrived with a few other items from Amazon on a hot summer day and I was not home to get the package inside. Even so, the crystals had only begun to melt together in its bag by the time I opened the box, and the crystals were still very usable. I have melted chocolate quite a bit over the years and never heard of paramount crystals until recently. Had used shortening to thin chocolate when needed but usually used melting wafers. I bought these crystals and put a bit in with melting wafers to thin just a small amount for a specific dessert item. To be honest, I didn't measure the amount I used. I just put a pinch at a time in the chocolate until I got the consistency I wanted. For such a small amount of chocolate (maybe a 1/4 cup at the most) I thought it took more of the crystals than it should have.
