Are these all 3/4" size? Someone said something about an assortment. Just want the bigger size only.

I purchased them back in March 2019. They were all 3/4". Several of them were dented but I were able to pop them out. Everyone one is usable. I am happy with the purchase.

Does it work on leather?

These snaps are sew-on snaps. If you can sew them on leather, they would work because they are just a little under the size of a nickel and are pretty strong.

Are these silver plated? or just silver color? or is it nickel plated?

Not sure but looks more like stainless steel rather than nickel plated.
