Ive heard this tea changes color with lemon juice. Is that true?

I bought this tea to make natural vegan blue food coloring for frosting cupcakes. The blue becomes violet with acid, and can be made blue again with baking soda. So I'd say that yes it would turn violet with lemon juice.

What does this tea taste like?

It is very mild in flavor. There is an earthy, almost mushroom broth flavor to it (but quite subtle); it's probably most analogous to a white tea flavor with the deep earthy flavor of an rooibos. The color compound turns from blue to pink in acid, so it changes color if you add lemon to it (which is cool in its own right), but the only flavor you get at that point is lemon.

What are the health benefits?

My research has found data showing it's high in antioxidants, anti inflammatory, and has analgesic properties, all with very low risk of any side effects.
