What documentation do you have regarding the "infinite shelf life" claim?

We use a conservative standard “best by” date of 2 years. That said, our purification process is quite extensive and because our cans and bottles are opaque, the water should stay fresh if stored properly. The FDA does not require an expiration date for bottled water.

Do the filters used in your filtration process include any wheat products? Does the epoxy can liner include any wheat products?
