So why does it say 8 ct when there are only 7 tortillas per package???

Smaller than large tortillas, larger than taco size. I use mine to make tostadas. They are addictive.

What is the source of fiber? I don't see it listed. A tortilla with 15 fiber grams, then fiber should probably be the first ingredient.

The fiber content comes from the modified wheat starch. We love these. They are chewier than regular flour tortillas but crisp up well and are soft and delicious straight out of the package.
