Does this come with instructions and recipes? If not, how do I use it?

I just purchased this December 2022. It did NOT come with any recipes, just a small brochure on the basics, so I was a bit disappointed at first. It said to visit their website for recipes... and VERY HAPPY to see that there you can download (for free) a pdf book that is over 900 pages long! (The paperback version sells for $17 on Amazon... with almost 3,000 ratings that average 4.5 stars).

After fermenting do you have to can or just eat sauerkraut ?

just cover the hole in the jar with the silicone top and place in the refrigerator. the sauerkraut will be good for weeks. the refrigeration will basically stop the fermentation

I have this in various sizes, I’m looking for a large 1 gallon jar with the air lock, can you get this for me?

I don't. I also don't care if something is made in China, since it is often pointless to try to buy USA products. Having said that. The Ball line of Mason Jars (gkass, lid, seal) are entirely made in the USA, in Indiana. You vould make a fermenter by getting a plastc top to fit, rubber grommet and an airlock. Use a drill to make a 1/2" hole on the center, push the grommet into the lid, and insert the air lock. Pour in water to the fill line of the air lock
