For once, I am proud to admit I cut the cheese. This Bellemain wire cutter handles block cheese effortlessly. Sturdy Build: The stainless steel frame feels durable and doesn't flex when pulling through harder cheeses. Great Precision: It's incredibly easy to dial in consistent, clean slices without the wire walking or binding. Best slicer ever. Had almost 3 years. The first wire just broke. Put in the replacement wire we're probably gonna go for another couple years on it. I use this on hard cheese all the time almost daily

Sturdy, beautiful, pretty functional
This product is nicely molded and finished with no mold or machining marks or voids. The finish is beautifully polished and doesn't easily stain. I have only had it a short while so can't speak to its long-term qualities. The mounted components seem to be of a quality brass-type material with good finish and good fit. It comes with a spare wire with attachments for mounting should you break the original. I have no reason to believe it would brake easily as it seems to be quite sturdy, but its nice to have a backup. I have only a couple complaints 1. The wire is mounted fairly far back from the tip. This means that the cut is restricted in depth because the tips restrict you to a somewhat shallow angle. I'd say max slice thickness is perhaps 3/16" (2.5mm) I'd like sometimes to use it to cut a slab into long thick sticks (at least 1/4 - 3/8 thickness) or to, by cross-slicing, make cubes. The tips also interfere if the cheese slab is large, forcing you to work on angles at the corners or to cut the slab up with a knife into narrower pieces. 2. The wire is mounted by custom machined or stamped brass rods that drop into notches on the handle. This is sort of convenient, but my old one used just the tip screws. This allowed both using bulk piano wire and easily changing wire gauge if you like, rather than using a custom part. My old one had the wire-mount screws at the tip of the fork so the wire was able to use at a right or even obtuse angle. Unfortunately the old one was cast aluminum and not even close to as nice looking. No matter since somehow, during moves, I've lost it anyways.. lol 3. The slice thickness adjustment is rather limited as well All in all though, it's a beautifully done piece I'd think even the snootiest chef could not mind having in their kitchen. The faults are sort of picky on my part, and I'd generally recommend this to others. It's a very reasonable priced and nicely finished item.

Quality Item!
Love-love-love this cheese slicer!! I’ve had a few other slicers, that were of far lesser quality. THIS one is the knight of slicers. Strong, sturdy and it also holds a level of nostalgia for me. We had a similar one when I was a kid. You can adjust the thickness, and it came with some extra wire…I totally recommend and would buy another one, if I ever needed to.

So far, this is what I think
I am reviewing the "Bellemain Adjustable Thickness Cheese Slicer - Replacement Stainless Steel Cutting Wire Included" I use a lot of cheese in my recipes, and I have had several chances to use this cheese slicer. Here is what I like. First, this is a heavy duty slicer for home use. The weight of the slicer alone gives you the feeling that it will last forever. The screws on the side for adjusting the width of the slice were difficult to loosen at first, but once I got them loose the first time it was good. The cut of the slice is adjustable by holding the slicer at different angles as well as adjusting the distance from the roller to the wire. The wire seems to be very durable and I hope that it will last a long time. I have not tried changing out the wire yet, and hopefully wont have to for a long time but it seems straight forward. Although I am not sure I have a Phillips screwdriver with that small of the head and may have to buy one. The only thing I can say that is a recommendation for the company is this, I wish the handle was about an inch longer. I have big hands and it is the handle seems a bit short for my monster hands making the grip feel off and uncomfortable. I am so tired of buying kitchen equipment that fails and have been making sure that I buy only things that are durable, and this one seems like it fits that requirement. I do recommend it, and I think that opinion will not change, but if it does I will update my review.

A quality wire cheese slicer! At last!
I grew up eating cheese of the sort that cheese lovers loath - I won't mention the brand but it came in big yellow bricks that sliced into bread-sized pieces. A generic slicer with a wire and a roller made quick work of it. Eventually the wire would break, and another one would replace it. It always seemed to me that it should be possible to replace the wire, but it's a bit more complicated than that as the wire has to be terminated securely at its ends to be held taught in the frame. I took a gamble on this Bellermain cutter and have not been disappointed. It has a good feel and heft to it: reflecting design choices that favor quality over manufacturing convenience. It came with extra wires and it appears to be possible to buy more should I run out. The design is such that I expect it is also possible to buy a roll of music wire and re-use the terminations from broken spares. Yes, that's the kind of nut that I am.

I loved it at first but now everytime I slice cheese, I have to tighten the screws that hold the wire in again as it won’t stay tight

So good, you'll wish you had more cheese around...
You may think all cheese slicers are alike, but then you've not used the Bellemain. First thing you notice is the lovely heft of the finely crafted handle. It's not lightweight, throwaway item, this one will be part of your culinary pursuits for a long time because you will want to use it often. Unfortunately, we're used to cheap, disposable things, so when we find an item that stands out for it's honest simplicity, it makes sense to tell others about it, and this is one of those times! You may not find yourself contemplating the benefits, merits, or aesthetics of cheese slicers very often. You may look on this as a simple tool, but when you pick it up, when you use it, you will feel differently about the experience. No longer are you just slicing, you may imagine yourself a maitre fromager or formaggiaio, carefully hewing the cheese from the block or wheel, even if you're simply making slices for your burger or salad. You may not consider the value of the slicer's weight until you feel how it benefits each cut. You may not even consider why you never thought to look for a slicer with knurled knobs on the thickness adjustments, if you're like me, you will wonder how you got along without them. I know it's just a cheese slicer. I know it COULD be boring, but it isn't. It's easy to use, easy to clean, easy to see that Bellemain took time to make a tool that people will want to use, that makes the job easier, that makes you wish you had bought that extra cheese while you were out, just so you could use the slicer again and smile about how smart you were to buy such a reasonably priced, well designed, simply functional item.

Heavy duty & a work of art
This cheese slicer will never break! It's so heavy duty! And I love how beautifully crafted it is, it's so smooth and comfortable in your hand. Came with extra cutting wires which I appreciate. It really is excellent quality cuts my cheese blocks beautifully. I'm very happy with my purchase.

Not worth the money!!
It’s heavy duty, but it’s not good. Adjusting it is not that easy, and different kind of cheese needs different height as the cutting cord has some slack, hard cheese tends to cut thick and soft cheese cuts thinner as cord is pulled less out. Will not recommend!
