It is very important that this heating pad does NOT have auto shut off, can you gauruntee that it does not?

If you can use a seedling heat mat that may be what will be best for you. However do not use a seedling heat mat in bed as a personal use heat pad, after my old personal heat pad stopped working I desperately decided to use the heat mat that I use for my plants during winter and almost caught my bed on fire while asleep.

I don't know if it is guaranteed but I have had mine for several months and my unit does not automatically shut off. As long as the switch is on, it is heating.

I would like to use this to make yogurt. Does anyone know what temperature it reaches?

My "high" temp is 120. The medium and low on my pad were too low... in the 80s and 90s. I put the yogurt jars inside a thick bottom pot with a wire rack and lid. Placed it on the heating pad. Wrapped a towel around the pot and temp stayed at 105 inside the jars. Worked perfect!
