So this takes up all the gpio pins...is it possible to still wire other things to the gpio pins once the screen is on?

Yes. You can still use the gpio while it's installed. I actually use the gpio as input for buttons along with the screen. You'll have to deligate which pins you need and figure out the layout. I needed to be able to have a trip wire button an reset for it so my application was simple enough

All of them, pretty much. In order to use this you have to put the whole GPIO into ALT-2 mode; there are a handful of pins left over for i2c that get used for the touchscreen. So no SPI, I2S, I2C (unless you disable the touchscreen and do some fancy soldering), and no UART.

Does the screen come with any accelerometer or other ability to rotate the screen?

The screen itself does not have the ability to sense its orientation and you would have to provide an accelerometer, separately. If you power the device that holds this screen with Raspberry Pi OS (or another ARM Linux flavor), you can rotate the screen's content easily from code.
