can i use it to cut block cheese?

I wouldn’t think so. Not if it is even a little soft. Would get mushy and smear all over the plastic & the blade. You would never get it clean. If it was hard, I think it would just crumble.

Does it slice potatoes thin enough for air-fryer chips?

Yes I think so. We’ve actually only sliced sweet potatoes so I have to push pretty hard. Just don’t push so hard on the potatoes since they’re softer. I really is so much easier than chopping you fingers off.
