Can these be frozen to extend shelf life if needed?

I have never had any around long enough to know. They are shelf-stable however.

Why is there so much sodium for plain noodles?

I just like the thinner noodles better. No law that says that you must use the packet. I purchased two kinds and one had packets and the other didn't. I , with the ones without, seasoned my own way with some chicken soup base and S'racha and prior precooked vegetables topped with chicken cubed up or other desired meat or fish. I lastly added the noodles and had a tasty meal.
