Can I set an alarm for when the temperature of my smoker drops too low?

Yes. You can choose the alarm type for the wifi meat thermometer. High Temp, Low Temp, Range are all available.

Thinking about using this for monitoring water temperature for my central boiler wood furnace. Can I leave it plugged in to the charger all the time?

Please note that the probe is not waterproof. It is not suggested to soak into the water. The WIFI Meat Thermometer supports charging and discharging at the same time. You could leave it plugged into the charger all the time.
