Excellent source of protein
Having this cake for the first time, my 15-year-old grandson wanted to make some cakes when he came to see his dad every weekend. Had a hard time finding this flavor so I purchased a case of 6 boxes. The whole family loves this cake.

Best Pancake Mix
This is by far the best Kodiak pancake mix. I’ve repeated this purchase over and over for the past several years. I hope they never discontinue this flavor!

Tastes Like Birthday Cake From the Griddle
The flapjackes (or waffles) made from this mix have the distinctive vanilla flavor of "birthday cake", plus a smattering of rainbow sprinkles. They are sweet but not overly so, making them good to eat plain or with maple syrup. I love that you can make pancakes or waffles by adding just water, although I prefer the recipe substituting milk for the water and adding an egg. Still, when I'm out of milk and/or eggs, I can still make these. I wish that the sprinkles came in a separate package instead being incorporated into the mix. That way, I would have been able to omit sprinkles the way I can omit eggs. Even with the extra sugar in this mix, it packs a ton of protein and whole grains into each serving. Kids, especially, will like them. I prefer Kodiak Cakes' regular and buttermilk mixes, but the birthday cake flavor makes for a nice change. You can even follow the directions on the box to convert the mix to make soft cookies or cupcakes. You must like sweet flapjacks/waffles and vailla to enjoy this mix, but, if you do, you can get a good protein-packed breakfast. -- Debbie Lee Wesselmann
