Fresh, tasty, numbing, but with some seeds.
These are the first Szechuan peppercorns I've ever bought, so I don't have a lot to compare them to. Here's my experience. They're very attractive and fresh-looking. They smell great when the bag is opened, very unique. The packaging is also attractive and reseals well.As other reviews mentioned, there are a fair number of seeds still in here. Sometimes that matters and sometimes not. I have used them as a spice in a jar of pickles, and in that sort of use (where they are a flavoring but not actually consumed), the seeds don't seem to matter a bit. However, if they're going to be ground up or used as an ingredient in a dish where they will be eaten along with the food, taking the seeds out is not difficult but can be time consuming. I de-seeded a heaping teaspoon of them, and it probably took me 5 minutes or so.They certainly give you that numb tingle! My best description is kind of a metallic buzzing numbness. The description of touching a battery to your tongue is not far off. As an ingredient in a jar of pickled okra I made, they give an interesting flavor, and the numbing creeps up on you after a couple bites. I find it a pleasant and interesting layer of the taste/texture experience.Overall, these seem to be very good quality. After receiving them, I found one of my local Asian markets carries a different brand, but I haven't bought any to compare. If you primarily use them in recipes where they are ground or consumed, you may want to shell out a little more for the ones that are supposed to have fewer seeds. I understand eating the seeds is unpleasant.

Definitely sichuan peppercorns
Do not use this product unless you know what you’re doing. Sichuan numbs the tongue quite powerfully. Used in small doses it liberates buried flavors in whatever you’re cooking. I roast these in cooking oil and use small amounts of the oil in various dishes, please find a recipe and follow it. too much of this product will have an effect on you for sure. I tested chewing directly on a very small amount of peppercorns, it took about 17 1/2 seconds to regret this. Many delicacies use this as an ingredient and I have eliminated it for years in one dish that I make fairly often. I didn’t use it because I knew it was powerful and wasn’t sure it was effective at its stated claims. This is very effective! I regret not having used it because it is a central flavor in my one recipe. My only complaint is the size of the bag, this bag is way more than a typical North American family would consume! Buy a bag share it with your whole neighborhood

Wow! Much better than other brands
Super flavorful with that numbing sensation. Be careful if you used to other brands as these are much stronger so you need to use less.Great stuff as expected from soeos brand.

Interesting flavor, but good
Never bought before… very spicy. Seems softer than regular black peppercorns but could be normal. We needed for a recipe, other wise might not buy again due to personal preference… nothing to do with the product.

The Best Sichuan Peppercorns I've Ever Used!!!
As soon as I opened the bag, the smell took me back in time. I can usually only get the dried peppercorn seeds where I currently live, so it was exciting to see the vibrant red color (Photos do not do justice), and smell that fresh Sichuan smell. I made my favorite chili oil, and I was surprised that I got the numbing spiciness from the peppercorns so soon. Usually, it takes 24 hours to infuse and get that taste, but I got it as soon as I tried it (a few minutes after it cooled down), and then 7 hours later, it was excellent! I will be using this spice in Hot Pot sometime, but this spice is so versitile, I'll be exploring new recipes. Good value for money. Will buy again.

Everything I expected and more.
These are just great. They impart generous heat but most importantly to the appropriate recipe, they produce the numbness and tingling of the tongue that characterizes Sichuan (or Szechuan) cooking. I am becoming more adventurous in cooking. They give you quite a lot, but the bag has a good airtight seal, so they stay fresh.

Tasty if you do not overdo it...1 tsp is more than enough. I used it to make shrimp & noodles. Next time I will cook them in the oil then remove, no more I'm muh bellyyy

Wow! The tingle numbness is REAL.
First time buying a Szechuan pepper and I tasted a tiny piece. It was bitter so I spit it out - then about 30 seconds later the slow tingle and numbness started! I guess that’s what they are supposed to do.

Nice colour, full flavour, great numbness, without sticks or stems. I've tried various from Amazon and this is one I can highly recommend. I write this as I am re-purchasing because I liked the last batch so much.

Peppercorns
Yep their peppercorns-remind me of pink/red peppercorns, they have the fragrance of peppercorns and the added touch of pepper to a dish, with the added mouth numb of Sichuan peppercorns and the added flower fragrance that comes with them-my mouth is still feeling the tingly sensation as I write this review, from a pasta dish I had 20min earlier! They can be over-powering to a dish, like any other peppercorn/or anything else added as is normal. The bag of 113g is actually containing quite an abundance of product-I filled my pepper mill, ground up a huge amount to 7/8fill a med-shaker bottle, and I still have about 1/3bag of them to play with in my chilli spice blend, looking very forward to that as I had anticipated not having enough...:)) very satisfied with this purchase!
