SHI BA ZI ZUO 7 Inches Stainless Steel Meat and Vegetable Cleaver Knife with Ergonomic and Sturdy Wooden Handle

The handle ergonomics of the 7" cleaver are great. Would've loved a more rounded spine but thanks to the tapered bolster, it's still comfortable to hold with a pinch grip long enough to dispatch a basket of hard vegetables for a stir fry. The rosewood handle meets the bolster and butt smoothly but not perfectly. Not a dealbreaker for $32. Cutting edge is slightly curved -- just enough for a rock chop if you wanna do that. Arrives very sharp but with a slight burr I removed with a few passes over a 1000 grit stone and a strop. Honestly, I'd use this cleaver more often if I didn't love my chef knife so much, but I go out of my way to use this and ONLY this when preparing any sort of Chinese dish. It just feels right :)

My Victorinox cooking knife is easy to use but is showing its age. It is also of light duty. I then bought an Imarku 7 inch meat cleaver out of necessity, which comes real handy when cutting ribs or chopping bones. While both of them are more than adequate, neither made me go "WOW" the way this Shi Ba Zi Zou does. This thing cuts raw sirloin steak as if it were cutting tofu. It is so sharp to the point of making me a little nervous the first few times I used it. I know I can't be sloppy with it. It is light weight and is sized just right for me. The handle is shaped for comfort. I kept telling my wife "you've gotta try this knife!" I don't know how durable it is going to be, but even if it isn't very durable, I would have no trouble replacing it every few years given it's low price. I am super happy about making this purchase.

The wood on the handle doesn’t perfectly fit the metal tang so it can scratch and irritate your hand. Otherwise good, especially for the the price point.

I am impressed with this cleaver. As a restorer of cleavers I have plenty of them so this was a luxury item for me. Its weight is great and sharpness on point. No pun intended. I shop by ratings and visuals and this did not disappoint on both accounts.

I received the cleaver today opened the box looked nice enough but handle had a problem. The steel on the knife was slightly above, or proud of the wooden handle on the side where my index finger would rub against it. I think sooner or later I would have cut my finger while using the cleaver. I contemplated sending it back, but I thought I would get some epoxy and build up the handle to better meet the steel. I've been an electrician for many years, and my wife suggested using heat shrink, sounded reasonable to me. So I had some in the garage the type with glue in the inside made for underground and wet locations. This is the result.....I did have to do some filing on the steel to get the glue off, that stuff is really good. It may not look the prettiest but it should function well, good grip. It is essentially a rubber handle. If I hadn't had the heat shrink already I would have used a 5 minute epoxy to do as stated above if necessary, or send it back.

Fantastic Cleaver. The weight feels just right—not too heavy, not too light—and it glides through chicken (no bones!) and vegetables like butter. The handle has a solid grip and feels secure even with wet hands. I dry off the blade immediately after washing. After a few weeks of use, the edge is still holding strong with minimal maintenance.

My 4th time buying this brand. Got one extra for my friend. And extra for relatives. After they use it, they said will never use other brand again. Excellent quality, excellent shape as well as excellent balance. Best of the best.
