Does this product leave residue that needs to be brushed away once you write your note?

Yes there are black bits after scratching, like after using an eraser. You will need to vacuum it away or wipe away with a damp cloth.

I imagine the holographic ones are not recyclable. Are the red and rainbow scratches notes made from plain paper that could be recycled?

I would think so, they seem almost cardboard like.

Just ordered this as a gift. Package arrived and it is the small box. Are the pens inside?

there are no "Pens" They come with 2 wooden dowels that are pointed at one end that you use like pens to scratch off

The dowels are not attached. Is there something else that can be used? A pencil? A bamboo skewer?

A quick check first - they are supposed to be packed inside the box. I'm mentioning this because often people buy the notes as a gift and email us about missing stylus pens - those people understandably didn't want to open the box and so initially didn't know the stylus scratches were inside. And you are right, other customers said they also use a pencil or a bamboo skewer (be careful with this) or even an empty pen as an alternative stylus for the scratch notes.
