It's a misconception that a "vacuum-packed" look means the oxygen was removed. Oxygen absorbers do NOT absorb air; they absorb oxygen, which is just 21% of air. That means that roughly 1/5 of the volume will be gone but 4/5 remains and is harmless.

Which food items should NOT be stored with oxygen absorber packets?

Sugar, salt, baking soda, and baking powder should NOT be stored with oxygen absorbers. They will last for decades when properly stored in Mylar and do not require absorbers.
