Is the 2mm wire rope strong enough for a grape trellis? After some years, any problems with it?

You will need to determine the tensile strength you require for a grape trellis and ask the manufacturers for their product's mechanical properties to see if there is a match. I have used it to hold outside lights between trees and has been OK with just a little elongation in high wind.

Can I use this as a stake for supporting orchids?

I don’t know anything about orchids in particular, but I should think one can use this wire as a support for plants that are not too big and heavy.

Is it strong enough to espalier your fruit trees?

Substantial gauge wire - would expect it to be strong enough. Easy to bend & use.

Is this actually 12 Gauge wire, as i'm wondering if it would be possible to make fairy wings with it ?

I measured the wire and it’s 14 Standard wire gauge. It is 1.946 mm diameter. Whether it can make fairy wings would depend on the size and weight of the wings which you do not state. If it’s for fitting to a small child it would probably do.
