good solid quality knife and a great gift for a casual culinary user
came back to write another review after a few months of semi casual use. stays sharp for a very long time and still is as sharp as it came. good quality knife that is durable for casual use i can’t speak to its value for someone say a chef or a serial murderer but for the occasional kitchen use for cutting vegetables and meat it’s good value for money

The best knife I have ever owned
This knife is so good I ended up buying the whole set. I always get compliments when I'm hosting at first it's the looks and then when I get them to use one how effortlessly they can cut anything. Only had to sharpen this knife once and it's super easy to sharpen and stays razor sharp for a very long time

Absolute pleasure to use
Beautiful knife, pleasure to use, perhaps a bit large for every day use but that’s not a fault of the knife at all. Slight blade warp on the one I got (3-4mm to the left at the tip) but not noticeable in use.Came very sharp and the box and paper sleeve are great for storage if you don’t have a knife rack, very thoughtful to include oil and silica for long term storage too.Grip is very comfortable too, though the spine can be a bit sharp if you like to choke up on the blade with your index finger.

Not as advertised
Be warned, these are not authentic hand forged Japanese knives as they advertise. They are mass produced in china. Out of the box it was very sharp which was great, the balance is also pretty good. The steel though is so insanely soft that I buckled the edge of the blade by merely cutting Rosemary! The knife was a gift so can’t really return it. You can find some authentic Japanese knives for reasonable prices so for me would never purchase this brand of knives.

DANS LA TRADITION
Je cherchais une lame de forme Kiritsuke évoquant la manière ancienne, la tradition des forgerons de campagne. C'est actuellement revenu à la mode, mais les modèles couramment présentés sont plutôt sophistiqués, assez éloignés de l'utilitaire dont se servaient les anciens.Le Mitsumoto Sakari, issu d'un atelier contemporain, respecte cet aspect et ce savoir-faire traditionnel, tout en ayant recours aux avantages de la technologie moderne.L'acier est un acier fin à haute teneur en carbone , ce qui garantit à l'aiguisage et à l'affilage, un fil au tranchant remarquable - test rasoir traditionnel sur les poils de l'avant-bras - et normalement durable pour peu qu'on le respecte (planche à découper bois).Comme tout acier fin, il doit être lavé à l'eau claire et séché sans attendre l'oxydation ( le mieux étant le papier absorbant type Sopalin, personnellement, j'essuie la lame directement sur le rouleau). Étendre une goutte d'huile fine - j'aime bien l'huile de camélia, un classique, mais c'est au goût de chacun - si non utilisé pendant un certain temps.La lame est forgée d'un traditionnel trois couches, ce qui fait apparaître le dessin délicat de la vague, que l'on trouve sur les sabres japonais de bonne facture.J'ai procédé à un affilage léger à la pierre à eau - Naniwa 1000/3000 - et un polissage rasoir sur un strop en cuir (l'excellent BACHER).Voir les tutoriels d'aiguisage sur youtube, ça s'apprend et demande du soin et de la délicatesse :Nombre de personnes font un mauvais procès au couteau, alors que le fil de la lame a été ruiné par un affûtage mal fait.J'ai adouci les arêtes de la poignée avec du papier-carrosserie grain 400. Goût personnel. Un peu d'huile fine de temps à autre sur le bois de la poignée.J'aime cuisiner et j'aime les beaux couteaux de cuisine. J'en ai un certain nombre, des Japonais et des chinois, que j'ai appris à apprécier avec le temps et avec l'usage. Ne pas oublier que la moitié de la qualité d'un couteau, si bon soit-il, c'est la main qui le tient et le guide.Pour conclure sur ce kiritsuke de SAKARI, je dirai queLe couteau est équilibré, dégage une impression de robustesse, est à l'aise dans toutes les tâches.C'est un excellent couteau de chef, et une sympathique évocation d'une tradition multiséculaire.Je l'aime.
