Q: Is this flour unhybridized Einkorn wheat?

As far as I am aware it is unhybridised it has quite a different genetic structure from all other modern wheat flours, Einkorn still grows wild in Southern Turkey but has not been used by people for millennia, so this has to have been the source of the modern crop. It is quite unlike other flour, its gluten is more fragile and I think it is best suited to flatbreads and pizza, but it delicious and crunchy. I have mixed it with other flours to make a more golden loaf with crispy texture.

Q: Can this be used in a breadmaker?

Yes. Don't know what it's like "neat" - but I mixed it with strong, wholemeal flour and made some delicious bread!
