Excellent Quality
I cook this like rice. I use a 3:1 water to millet ratio and cook in a clay pot. Make sure to soak overnight before cooking.

Is it really ORGANIC as listed?
I have used one pack so far. Easy to cook in the rice cooker. Comes out well! However, no where on the packet does it say that it is organic although it is listed as organic. For that reason, I am giving it 3 stars.

Very interesting, extremely versatile grain can be used in both savory and sweet recipes
Very interesting… Full disclosure, I’ve never tried proso millet grain before now. It’s a healthy alternative to rice, similar to quinoa in some ways yet also very different, it’s a great way changes things up in both flavor and texture. It’s great served with stir fried veggies, would also probably make a great millet salad, I plan to try that next, using my quinoa salad recipe but substituting with the millet. The only real down side to millet is the preparation time, this grain needs to soak for several hours/overnight. Speaking of overnight, it would also be great added to overnight breakfast oats. Overall, it’s quite neutral and is best mixed with other more flavorful ingredients. It’s a good filler and can definitely help stretch the grocery budget. It doesn’t smell great straight out of the bag but after being washed it’s more pleasant. Arrived fresh and well within the expiration date, safely and securely sealed. Highly recommend!
