Even when roasted and ground there was not a strong szechuan flavour

To make this properly simply: pick out black "bulbs" (round things) and any notable stems -> get a pan up to heat (med-high) -> roast until they smell fragrant and/or get moist looking -> grind in a mortar and pedestal -> sift through a fine sifter/tea leaf holder/strainer -> sprinkle on. To make these improperly (LOL): chew them until your mouth is numb & spit out the debris left in your mouth Great price per gram!

If you like Szechuan peppers, these are for you! Very fresh tasting and the great numbing sensation you get when using them in recipes. We made steak aupoivre for Christmas dinner for 8 people. Everyone loved it!
