This mirin is excellent—it's not too sweet and doesn't leave a dry or bitter aftertaste. I've been using it in various dishes as a substitute for sugar. However, it's important to consider the type of dish you're making. For example, if I'm preparing sweet and sour chicken, I still add some brown sugar, but I reduce the amount to half of what the recipe calls for. In stir-fry dishes, I skip the sugar entirely and use this mirin instead, typically around a teaspoon or more, depending on my preference.Edit: For some elderly folks who want lower sodium intake, I simply use less of the low-sodium soy sauce with a pinch of chicken bouillon powder; remember less is better.
