Awesome new Cassava product!!
I have been GF for 18 years- started exclusively using Cassava Flour 6 years ago, it’s the only flour I use now. I purchased this brand due to the brand I was using inflating their prices by double. There has been No transition period, it is exactly as expected, no difference whatsoever in color, texture, results or quality!! I read other reviews prior to ordering and was concerned that it wasn’t going to meet my expectations but clearly those who wrote “off” reviews do not have understanding of Cassava and how to properly use it for baking. It takes quite alot of precision to adjust recipes to using Cassava and balancing ratios. Baking with Cassava does require the use of an additional starch; either Tapioca or Arrowroot and increasing your Baking Powder (I make my own with Cream of Tartar and Soda) depending on the lift you need. Research, trial and error- clean, healthy baking can be achieved!

Cassava Four was bad
This is the 3rd time I've purchased this cassava flour. We loved it for making awesome tortillas. We had purchased another brand at WF when I ran out of this and realized we liked this better so bought more. It sat in my pantry until I had finished the other brand. I tried to make tortillas last night, using the same recipe I always use, and this would not turn to dough; it was more like tapioca starch or something. The olive oil and water didn't really mix in...hard to explain but very strange. I assumed I had done something wrong with my measurements so tried adding more cassava. When that didn't work, I threw it out and started over again just in case I had somehow measured wrong. Nope. Same goupy mess. Not sure what happened to this, but I threw the entire bag out because I'm not sure what it actually was. Too many months have gone by since I ordered so can't get money back, but just thought I'd warn y'all. Not sure what was in my bag of cassava but it wasn't the same thing we've used and loved in the past.

It’ll do in a pinch…
This Cassava flour was okay. I prefer the Terrasoul brand and that’s what I usually buy because it has the perfect consistency, but I noticed they haven’t been selling that brand anymore. The Impact cassava flour doesn’t seem to work as well in recipes, I’ve noticed it needs less liquids than the recipe calls for or the recipe is ruined with too much liquid and I have to add a ton more cassava flour. I bake and cook with many different grain free flours since I’m on an AIP diet and this one is just okay. I prefer a thicker more sturdy consistency. This cassava flour is bright white in color and what I usually buy is more of a yellowish white color. The main good thing I can say about it is that’s a good gluten-free option. Hope this helps!!

I am so happy to find this brand for my crackers
I bought while traveling on the mainland and brought in home to Hawaii with me. I made crackers out of it and they are sooooo good. I couldn’t find this brand the local health food store had another brand $14 for only 1lb. I was so happy to find it on Amazon and 2lb for less than half price. I have made muffins and other items. It worked great for my needs. I will definitely keep buying this brand.
