Do these ever go old or is there no expiration date on them? Any experience with that?

There’s no expectation date. The bisquettes are delicate. The number one item to avoid is moisture. They will crumble. Store unused bisquettes in a zip loc bag and squeeze most of the air out of the bag before zipping it.

Do you soak these in water before putting in your smoker

No, you do not soak the bisquettes in water. They are pushed out to the heating plate dry, where they burn/smolder for 20 minutes, then next one pushes burnt one off the edge of heat plate into bowl of water to extinguish it.
