Danger of knots in this wood, you might be lucky getting one with no knots where you want to shape.

Is it just one singular piece of wood?

Yes the ones I received were about 8ft long but you can get smaller ones

Is this ok for a brick mounted support for a 5 foot gate?

I wouldn't use it no but it is up to you
