Industrial pasta is pushed through Teflon dies, leaving a smooth, slippery surface. Bronze dies leave the walls rough and porous. You see it as a chalky bloom on the dry pasta, and taste it as sauce that grips the ridges.

Each bag is 1.1 lb (500 g), which is around nine 56 gram servings, so roughly 18 servings across the two-pack.

How should I serve rigatoni rather than a long pasta?

The wide bore and deep ridges are built for sauces with body: ragu, sausage and fennel, baked al forno with ricotta, or a thick pesto. The sauce gets inside the tube instead of sliding off. Long pastas suit thinner, oil-based sauces.
