What did you use this for?

I use it for making omurice. It's a japanese dish basically it's an omelette fried rice. The sauce works well with it.

Can you just make a cup full, for dipping

Yes. Just work out the the amount of powder for the amount of water in your cup. Put the powder into the cup and add boiling water. Put in the microwave for 30 seconds on full which will boil it again. give it a stir. If its not thick enough for you add a little more powder and microwave again. Or add a little water if its too thick. You will find what amounts are suitable for you.

Can i use milk instead, if i make bulk can i freeze? what are the storage guidelines on this once opened?

Yes of course, I always make this with milk. Once opened store in a clean DRY area. Dry being the key,
