Edit: 12/07/2024 The previous experience with the knives seems to have been a one off (thus far), as the knife santoku has been replaced as well as Hoshanho's impeccable customer service has left me in awe; The knife after some use and cleaning has yet to have a single fault to the wood. 5 star review and strongly recommend if you want a very aesthetically pleasing and performing knife set in the kitchen. Still, due care is intended for these knives. Recommended to treat prior to use, love thy knives. These knives so far have been amazing, in the three days I've owned them before writing this review! Used a total of four times and the handle is already starting to split. It's a real shame with how good these knives feel in the hand and how sharp they are. Having read the reviews on these knives previously it has been said that these have a higher likelihood of both rusting AND splitting handles. Took the gamble and am now waiting to see them start rusting (the main difference between VG-10 and AUS-10 steel, fyi, is VG-10 is more resilient to rust). Mileage may vary but at an ABSOLUTE MINIMUM before you use even once, treat the knives wood finish. The knife in the photo is the santoku. I'll update my review accordingly on the future use and experience with these knives.
