I can't have dairy from cows. Can I use Goat milk with this starter

Although I haven't used it with goat milk, any milk will work. I even use the whey from the finished kefir to do lacto-fermentation of my hot pepper sauces.

Is it normal that the kefir sachet immediately turned the water that I mixed it in pink?

I don't know, but why were you mixing it with water? It can be mixed directly into the milk you have sterilized. I usually take about a cup of the prepared milk, whisk in the kefir starter, and then stir that into the rest of the milk to innoculate. (See my post in the customer reviews section. That method absolutely works!) I bought three sachets of this stuff many months ago and still have one packet left. As long as you reserve a cup of the finished kefir, it will make a gallon of your next batch (even many weeks later). No need to use the starter each time. Indeed, the "great grandfather" batches actually seem to be of better quality!

I don't drink milk. Could I also make this with almond milk or coconut water?

I used it with almond and coconut milk. I believe the water may require different grains.

Can you use this with pasteurized goats milk?

According to their pdf instructions, yes, any mammal milk, cow, sheep, buffalo or goat. As to consistency of the final product, I can't say as I have never tried it with goat milk but I am sure it should be fine.
