Very difficult pan to braise with. The bottom is not completely flat. It has a dome like shape in the center and when you are heating your oil, unless you use a ton, it all moves to the walls of the pan with none to remain in the middle where you want to place your food. The oil reacts to the bottom like it's touching water and quickly beads and finds its way to that reservoir. It's difficult to brown without fat or oil and it's impossible to get it under your food unless you flood the entire bottom of the pan. I don’t want to have to use that much oil, ever.

This is by far the absolute best pan I have ever owned and since I’ve been married 53 years, I’ve been through a lot of different cookware over the years. At first, I thought it was really expensive, but you absolutely get what you pay for with this brand. I couldn’t believe how heavy it is, how beautiful it is and how well it cooks food on my induction cooktop. Even the packaging of their product was awesome. Plus it was one of the few brands I found that goes from stove to an oven up to 550° and the extra bonus? Absolutely NOTHING sticks to this pan even when I burnt fried chicken, I just rinsed it out with running water thinking I was going to have to scrub and the water alone cleaned the pan without me even having to use soap and a dish rag. I loved it so much I bought the 4 1/2 quart deep skillet as well.

First it looks lovely. Second, it is a nice weight, heavy but not too heavy. I like the half way in between dutch oven and fry pan size. Very smooth bottom for my induction range. Great on searing and being non stick--don't know about durability yet, but very happy with purchase.

So far so good, heated and oiled it , haven't used it yet , it is heavy but a beautiful product, i picked the gray silver ,love the color
