What is difference between “professional” and “non-professional” duduks?

Mostly it is the Reed. You have to find a very good Reed maker which some blogs may write about or go to Armenia to ask around. But it is also just luck based on your mouth and preferences that you come across a Reed that is easiest for you to play. Sound is good for almost any apricot wood instrument. Most professionals have over 30 reeds and choose what they want for the style of playing in a given piece.

Can barely make a sound, seema wrong. Is it me or the instrument/reeds?

It takes lots of practice. Double reed instruments are hard to play by nature. Give it a little more practice and try soaking the reeds to loosen them up.
