Can this be diluted with water to make a shoyu ramen broth

This would be one ingredient in your broth but it cannot simply be diluted. Traditional shoyu ramen broth is a labor of love and is best done over a weekend (this is a traditional style of making it) as there are quicker ways. A website such as www.wokandskillet.com has a good one.

Is there an expiration date?

Yes. My current bottle is Jan. 2020. However, the label suggests keeping it in the refrigerator (I do), and using it as soon as possible after opening.

Is this product 100% organic (not just non-gmo)?

No. This is great, refined shoyu, but not organic. Try Ohsawa Nama Shoyu on Amazon, it is of comparable quality AND organic. FYI they are both salty, as are all high quality shoyus. Ohsawa claims only 720mg/TBSP, but it seems like a translation/typo error; TBSP should probably be tsp, which is one-third of a TBSP. Kishibori states 870mg/tsp, which seems right (and equals about 2610mg/TBSP!). Ohsawa is probably about the same, but it is also organic. And no, I have no connection to the Ohsawa company, I enjoy both shoyus and bought it only when Kishibori was not available.

How long will a bottle last once opened? The bottle notes say to "use as soon as possible" as the soy doesn't contain preservatives

It's soy sauce, full of salt. It's unusually good soy sauce but still soy sauce. Mould and bacteria are not happy in such a salty environment. I opened mine months ago, kept it in a kitchen cupboard, and it still seems just as good recently. I expect it's in any producer's interest to insist that their product must be consumed as fast as possible! ; )
