Q: What is the shelf life? And approximately how long does it last once opened since the ingredients do not include natural/non preservatives.

The unopened jar that I have is good until 2/2023. The jar that I had opened lasted several weeks. We go through it pretty fast.

Q: I thought achaar, by definition, was ground green mangos? Nice and tart, supposedly?

Achaar literally means pickle and although mango is the most commonly picked item across most of India, lemons, tomatoes, ginger are also very commonly pickled with similar spices. Yes, it is tart but also somewhat sweet.

Q: what kind of salt is used? I can't have sea salt or iodized salt

The label just says salt! We love it..mix with yogurt, marinate chicken thighs, cook in hot oven, wonderfully easy tandoor chicken

Q: What is the sodium information per serving?

For the Roasted Garlic Achaar, it's 20 mg per tsp.
