TRUE PROFESSIONAL PERFORMANCE
There is an old expression that one would use to praise another one's actions or performance that went: "Now you're cooking with gas!" Well, that needs to be updated to "Now you're cooking with induction!" Seriously, I have been eyeing this particular Duxtop model for some time, and induction countertop burners in general for some number of years. I've looked at them in person and online, and finally decided to purchase this Duxtop commercial model. I have had it now for a little over a week, and I find myself using it daily, and even going out of my way to use it over my "high performance" GE Profile Dual Fuel Range. My range has a gas cooktop that has been good, but I have always wanted to try induction. This Duxtop commercial model outperforms even my high output burner on my range. Boiling water is a snap, whether for a pot of coffee, or a big pot of pasta; melting butter, or clarifying butter, frying and sautéeing, cooking slowly, keeping food warm, this Duxtop is simply a dream come true. The unit itself is very well built. The cabinet is stainless steel, the cooktop itself is thick black glass, and the touch controls are sensitive and responsive. There are quick-start buttons, and three quick keystrokes get you cooking in a jiffy. You can select between "power levels" 0.5 (Very Low) to 10 (High), and you can alternately shift to temperature mode. Temperature mode seems to be pretty accurate; I have set the temperatures to varying levels for different foods to hold at 140°, 180°, 200°,, and each time, I fitted the pot with two separate probe thermometers on opposite sides of the pan. In each case, I used either water, or a dense vegetable soup with chickpeas. In all cases, the Duxtop warmed the contents of the pan evenly, and held the contents at the preset temperatures, with a little variation of about ten degrees on either side, as the burner cycled on and off. I found this variation to be totally acceptable, and my next step will be to attempt deep frying. I have used this for pressure cooking dried legumes, regular boiling for pastas, soups, coffee, tea, etc., simmering and slow-cooking soups, sautéeing, and shallow frying... all results have really been to absolute perfection. Cookware to be used with an induction cooktop must be made of ferrous metal, e.g. iron, cast iron (Lodge, Wagner, Le Creuset, Staub, etc.), stainless steel to which a magnet will stick (many brands such as All-Clad, Cuisinart, Viking). It will NOT work with cookware made from ceramic, Pyrex, Corningware, aluminum, copper. The best way to test your cookware is to take a standard kitchen magnet, and test the bottoms of your cookware. If the magnet sticks, you're good to go; if not, then reserve that for your stove. Speaking of cast iron, and this Duxtop commercial model, this particular model can withstand a total weight capacity of sixty-five (65) pounds! This model is, as I said, well built, heavy for its size, and very, very stable on the countertop. I shall give updates, if I find them necessary, as to continued performance and longevity, but it is my instinct that this is one of the best choices I have ever made in terms of having a good, high quality accessory burner to supplement my stove. If I had to voice a regret, it would only be that I should not have waited this long to make this purchase. It is well worth the money! As a matter of fact, I am going to order another one soon. You can buy this with confidence. MARCH 2021: THIRTEEN MONTH IN-SERVICE UPDATE: Performance is just as excellent thirteen months later as the first day I plugged it in and put into service. I literally use this Duxtop Portable Induction Cooktop every single day. From boiling water for coffee or tea, to sauté or simmer, or frying, this appliance is tops!

Fantastic introduction to induction cooking
This has become one of my favorite kitchen tools. I really enjoy collecting and using pro/semi-pro cooking equipment, and this induction burner gets used constantly despite the fact that I primarily cook on a gas range. Most often I use it as a dedicated side burner when I need to boil large amounts of water or maintain long simmers without tying up the main stove. It’s also absolutely fantastic during the summer because it puts far less excess heat into the kitchen compared to running a gas burner for extended periods. This was my first real experience with induction cooking and honestly it sold me on the technology. At this point I’m fairly certain my next full-size range will be induction. Performance-wise, it’s excellent. Heating is extremely fast, temperature control feels precise, and it brings water to a boil shockingly quickly. If someone is induction-curious or just wants to understand why people rave about it, I think this is a very good entry point at a reasonable price. I’m still giving it five stars because I genuinely love using it, but I do have some complaints: * The “stainless” exterior isn’t as corrosion resistant as I expected. What I initially thought were grease speckles turned out to be small corrosion spots. They clean off easily enough with a Scotch-Brite pad, but I don’t love having to occasionally do that maintenance. * The beep is extremely harsh and louder than necessary. * The controls are slightly annoying. You have to power it on and then press menu to select modes instead of just directly choosing a function. * The timer defaults to being active every time, which feels backwards to me. It would make more sense if the timer was optional instead of something you disable repeatedly. Even with those annoyances though, the actual cooking performance is so good that I still highly recommend it. Fast, precise, efficient, and a genuinely useful addition to a serious home kitchen.

A solid machine.
I'm new to induction cooking, with that said, I'm impressed on what it dose. I know that the stove top are better overall, I'm happy with this unit. I use it as my main burner. I'm going to move soon, and I didn't want to replace my stove. I can do everything faster then before. Easy use and easy clean. 👍🏾. I'm going to keep it.

Works on (small!) Solar - helping to reduce my carbon footprint
For more than a decade I’ve been living solo, off-grid, in a three-season shed using propane for all my creature comforts - heat, dinner, wash-up and personal hygiene. Since purchasing the Duxtop induction cooktop, I have eliminated my use of propane for making dinner, washing dishes and hair & face wash-up. My solar energy system is small, 400 watts with a 2200 watt pure sine inverter. It powers all my needs. Initially I built it to power a DC fridge, but since have used it for so much more. A note of caution: if running on solar, it’s critical that you run this cooktop on only the purest of power sources, such as an inverter supplying a pure sine wave. The cooktop is said to draw 1800 watts on full power (level 10). However, I found it actually draws slightly less than that. Regardless, that’s more than 4 times the power my system is capable of generating, yet with the features of the Duxtop I achieve an appreciable level of energy efficiency. This cooktop, like others designed for the counter, cycles its power draw when set below half power (level 5). For me, that’s perfect and I feel it is the greatest factor in its efficiency. Some reviews here have spoke ill of this design feature and perhaps rightly so for specific types of cooking. I’m just a simple guy cooking simple foods like stir-frys, sautéed veggies and boiled pastas and such. The Duxtop does an equal or better job than my propane cookstove, and with zero emissions! The use of this induction cooktop, with on average 30-45 minutes of use per evening subtracts only 6-10% from my battery storage which is entirely replaced the next morning with an hour of sun. The unit has a separate button for boiling water, which ramps the power to full (10!), and will bring a boil in under 10 minutes. That’s unnecessary for my use. I found I can boil a 1.5 Qt pot in 5 minutes using half power (level 5). Then, I add my food, bring it back to boil and turn it down, allowing it to cycle and save power. The power ramp, logically, becomes more aggressive the closer you reach level 5. Overall, the cycling seems gentle enough that it’ll be okay for the long term health of my inverter. Level 5 will draw about 800 watts. All the levels between 3 and 5, cycle from 6 watts to somewhere near 800 watts. Levels 2.5 and below only reach to about 600 watts. Each half setting is achieved by how long the unit rests at the top or bottom of the cycle. Yes, as others have claimed, the actual watts vary and it is likely designed to perform that way on purpose. This unit has half settings which lends a certain degree of finesse that other units don’t. I specifically like the lowest settings, something my propane stove never could achieve without burning the food. The Duxtop even has a warming button said to hold the pan (not the food), at 140º, which I believe is even lower than the lowest power setting. These low settings allow for and actually work in keeping the food from burning or boiling over. The unit also has a temperature mode which allows you to set a specific temperature. I found it difficult to monitor cooking in this mode because I personally don't think in terms of temperature when controlling my stove top cooking. I'm use to numbers and power settings. Also, the unit sets the temperature of the pan or pot and not the food, so I think there's a bit of a mis-correlation that happens there between food temp and pot/pan temp that makes it somewhat difficult to track. The warming circle on this unit is drawn out on the surface to be about 8 inches. I would suggest that the element inside is actually a bit smaller. I found no heat distribution issues using an 8 inch pan, even a 10 inch (cast iron), pan does quite well. It’s when I tried a 12 inch cast iron pan that I found the outer perimeter to be much less than hot. Still, I was successful in completing my sautéed meal. I found that I needed to think differently. The coolness of the edges required me to treat the pan like a wok. I could rest some items on the side while cooking other items in the center. It was important to keep most things moving around the pan. Despite this, I won’t use this pan again. I have a mini, flat bottom (8”) wok that works great for this type of cooking. The build quality of this Duxtop unit, I feel is quite good. If not commercial grade, it's quite close. The higher price point is worth it in my opinion to have a fully encapsulated unit in stainless steel. The glass top is nicely sealed around its perimeter from spills and there’s a stainless steel extension off the back which I imagine helps protect the cord & socket (stout quality) and fan exhaust openings. I also chose this unit for the touch surface buttons. I have too many appliances with those analog buttons under a plastic face where that plastic face has soon broken away, revealing a hole with a tiny button inside. The feet of the unit are also substantial. Made from rubber, they stand about an inch above the counter. Caution: they may leave scuff marks on your white Formica counter top. As I understand, these units require a fan for cooling. This one is no exception. It runs as soon as you engage the power button and turns off 2-3 minutes after you shut the unit off. The sound level is equal to the sound of a microwave. No biggie for me. If sound is your pet peeve, then the beep you get when you press any button or remove your pan from the surface of the cooktop, will be a sore spot. I wish it didn’t beep so loud and so frequently when I remove the pan during cooking. It would be far better to have it beep once, then beep maybe 10 or 15 seconds before the unit will shut off. Not every 2 seconds until I replace the pan. There’s been reviews complaining about piercing, high-pitched sounds coming from these units (in general, not necessarily this unit). I have not experienced this with this Duxtop unit with all but one of my pans and only to a small extent. It leads me to believe that, yes it is a real thing, but it may not be the cooktop, but the quality of the pan in use and the particular ingredients inside that pan. There is certainly a different learning curve when cooking with induction and perhaps more so with these portable units. I am still finding my way and experimenting to find the best efficiency. This cooktop has broadened my capabilities in cooking and in other simple ways while “roughing” it off-grid, like the ease of having hot water (almost on demand). At the same time, it has reduced my carbon footprint and with its build quality and features, it should last a long time. I would highly recommend it.

Very pleasantly surprised. Great professional product.
I have a $700 Vollrath Mirage Pro 59510P. This unit is 90 percent as good as the Vollrath for 1/4 the price. The Vollrath has 100 power level settings versus 20 on this one. 20 is twice as many as most induction cooktops. This is good. When the temperature control is set to 300 degrees, there is very little variation. The most I saw was -10 to +5, 290 degrees to 305 degrees. Using an infrared thermometer directly on the bottom of the pan. On the low end of the scale, it seems to run a few degrees warm. On the high end using a dutch oven, With two quarts of oil in it, it seemed to run on the cold side. About 40 degrees low. As far as induction goes, this seems to be far better than average. I had a Newwave pro that I replaced with this Duxtop. With the Newwave pro, the temperature varied by 100 degrees below what I had it set at or it was 100 degrees above it. It was either not cooking or burning up the food. I hated using it. The temperature settings go from 120 degrees to 460 degrees. This is better than most. The only con I can find with it is the temperature settings are in 20 degree increments. Ten degrees would be better. But you're not going to find anything that precise without spending 700 dollars or more. The learning curve on this Duxktop Is rather short. There is a slight variation between pans and the amount of oil you have in them. But you will figure it out quickly. It's nothing like that Newwave Pro that I had, that cooked differently every single time you used it. Duxtop makes a consumer version of this unit, which costs about 95 dollars. I recommend that you spend the extra money and buy this one. This one is more sturdy and supports considerably more weight. The controls are very easy to use. But there's one thing I really don't care for once you hit the lock button. The only way to make a change is to turn the unit completely off. In summation, I have used induction for several years. Unless you get a bad unit, I am sure that you will be very pleased with this Duxtop. Like I said at the beginning, it is 90 percent as good as the Volrath Mirage Pro.

Looks good, feels beefy, **UNBEARABLE** possibly dangerous 17kHz coil whine.
I scaling up a small hobby and wanted the ability to heat as safely and portably as possible. The induction cooktop is absolutely perfect and I loved the beefy build and known brand of this specific product. People complain about the fan being noisy and loud beeps, I'm thinking *perfect*...electronics stay cool in hot environments and I'll know when folks are using it. Unfortunately when I first fired it up on Boil I was greeted with this piercing extremely high pitched whine. I understand the physics of induction cooktops and immediately recognized it as 'coil whine' in which the pulsing current and resulting magnetic field cause the coil, adjacent parts and cookware all to resonate. Unfortunately in this case it's *incredibly* loud. My daughter the room over immediately reacted and came in to the kitchen with a confused look, cupping her ears yelling *what is THAT?!?*. I tried several pieces of cookware and the effect was slightly different here and there but largely the same. I've attached a spectrogram of a recording of the sound, from my office, *with the door closed* from at least 30' away. After powering it up and a few dots from the beeps of the menu you can see the coil waking up at 17kHz. I turned it off after 10 seconds or so and It's been close to ten minutes of me farting around with the audio file and screenshot and my ears are still ringing with some kind of induced tinnitus. Something I'm not happy about as I struggled with it for almost a year back in 2018. I don't understand how companies can release a product like this. It's like buying a new car with a horrific belt squeal. Sure it can happen but TEST FOR IT. Holy cow. What a massive disappointment.

I do all my cooking on it!
I’ve had it for 5 years! I use it everyday because I hate my electric stove. I keep it right on top of my electric stove on the left side so if I should need another burner (rarely) I can use a stove burner for another pot if needed. It can boil 1 quart of water in 4 minutes on the high power setting and also has a keep warm feature. It also has a lock so a child can’t change the settings. I also love that it has a timer so that if I have to run out I can set the timer to turn it off while I’m away. It’s a feature that is great but only for certain things like soup or stew, etc. And when you shut it off it doesn’t keep cooking like an electric stove does. It’s so easy to clean. Some people hate the beeps but that’s a minor complaint. I wouldn’t be without it EVER!

Impressive Physical Build Quality for the Price.
* I’m a retired scientist and engineer who operated laboratory, commercial, and industrial equipment. For the price, this induction cooktop has an impressive physical build quality. My comments are based solely on examination of the external components, however. Since opening the unit voids the warranty (there is a sticker on the bottom), I cannot examine the internal components. * I checked the weight on a commercial scale; it’s a hefty 12.1 lb. It rests on 4 large rubber feet (7/8” high X 7/8” bottom diameter) that are screwed on, not glued on. The unit will stay put on a table or countertop: it’s not easily nudged, and it won’t “walk” during operation. The air intake for the cooling fan is on the bottom of the unit; the large feet maintain good clearance for proper air flow. * The power cord is heavy duty, with a three-wire grounded plug. It is attached to the rear of the unit via a hefty line restraint cable clamp. * Most impressive is the sheet-metal casing, which comprises a top housing, a bottom cover, and a rear splashguard. The top housing is made in one piece. I can’t tell from the outside whether there are any weld joints. But there are no discernable external seams on the top, front, rear, and both sides. All edges and corners are smooth. The bottom cover and the rear splashguard are attached to the top housing via screws. This design minimizes the chances of liquids and food particles entering the unit. * The sheet metal, particularly in the critical top housing, is heavy gauge. According to the manufacturer, the unit has stainless-steel construction. I can’t tell for sure, but the top housing and rear splashguard appear to be formed from a brush-finish stainless steel; they are non-magnetic. The bottom cover appears to be coated steel (again, I can’t tell for sure); it is magnetic. * The glass cooktop is about 11-1/8” square. It is surrounded on all four sides by a stainless-steel frame, about 7/8” wide all around. ***Note that the frame is slightly raised above the glass; therefore, the base of any cookware must be small enough to sit flat on the glass cooktop.*** * The seam between the glass cooktop and the opening in the top of the top housing is sealed with some sort of adhesive compound. Similarly, the seam between the glass control panel and the opening in the front of the top housing is sealed. These are nice touches to minimize intrusion of liquids and particles. * The exhaust vents for the fan are located in the back of the top housing. There is a rear splashguard, about 1-1/4” wide, screwed onto the top of the back of the top housing. It runs along the entire back of the top of the top housing, serving as a 1-1/4” wide overhang. The seam between the rear splashguard and the top housing is also sealed. This design shields liquid and food spills away from the exhaust vents. The rear splashguard also maintains adequate air flow by preventing the unit from being pushed too close against a wall. * I need a sturdy unit to routinely boil large pots of water. The total weight (about 8.5 quarts of water + pot + lid) I need to handle is about 27 lb. Since the cooktop is rated to handle a load of 65 lb, I have plenty of margin and don’t need to worry about overloading it. * The controls are all located on a sealed touch-sensitive glass panel, located at the front of the unit and oriented at an angle for easy access. Spills are easily cleaned up and will not mess up the controls. * On the control panel, there are the following components: a large backlit LCD display; 8 well-spaced touch-sensitive switches (Lock, Timer, Boil, Keep Warm, +, -, Menu, and On/Off); and an indicator light above the On/Off switch. There is no keypad as in my microwave oven control panel. * There are some functions I don’t care for, and some functions that I would like to have (but are not present). But I won’t ding a star for this, since it’s a matter of personal preference. The lack of a keypad makes operation slower, but I won’t ding for that either. * Once the unit is plugged in, the indicator light stays on. I find this odd. Since the unit is intended for commercial use, it will likely stay plugged in constantly in most instances. * When the On/Off switch is touched, the fan turns on and the LCD display lights up with a row of blinking dashes. Some customers complain about the fan noise, but I have no issues with it. It’s on par with my microwave oven. For now it’s a steady whoosh; no irritating squeaks, squeals, hums, or whines. After the unit has been in operation and is then turned Off, the fan will stay on for about another minute to cool the internal components. Good design feature. * When a switch is touched, the unit emits a beep. Again, some customers complain that it’s too loud, but I have no issues with it; again, on par with my microwave oven. * The unit operates in one of two modes: Power mode and Temperature (Temp) mode. When the Menu switch is touched, the unit turns on the Power mode with a default setting of 5.0. When the Menu switch is touched again, the unit switches to the Temp mode with a default setting of 300 (degrees F). Since Power and Temp are the only two available settings in Menu, operation would be much simpler if the Menu switch were eliminated and replaced by two separate Power and Temp switches. * In the Power mode, the (+ and -) switches can be touched to adjust the power level from 0.5 to 10 in increments of 0.5. * In the Temp mode, the (+ and -) switches can be touched to adjust the temperature from 100 to 460 (degrees F) in increments of 20 degrees. * There is also a timer, which is off by default. When the Timer switch is touched, the timer is turned on. The (+ and -) switches can be touched to adjust the Minutes from 0 to 59 minutes in increments of 1 minute. When the Timer switch is touched again, the (+ and -) switches can be touched to adjust the Hours from 0 to 10 hours in increments of 1 hour. Note: The maximum setting is 10 hours : 00 minutes. If the minutes setting is greater than 00, the maximum hours setting is 9. When the Timer switch is touched again, timed operation starts. When the timer counts down to zero, the power to the induction coil is turned off, and the unit emits a series of beeps. Even if you don’t plan to use timed cooking, the Timer is handy as a safety backup to automatically turn the unit off in case you get distracted and forget to turn it off manually. * There are also two express switches: Boil and Keep Warm. But when the unit is first turned on, these switches cannot be activated until the Menu switch is first touched. That seems like an unnecessary step to me. When the Boil switch is touched, the unit is switched to Power mode with a power level of 10; and the Timer is activated with a setting of 0 hours : 10 minutes. When the Keep Warm switch is touched, the unit is switched to Temp mode with a temperature setting of 140 degrees F; and the Timer is activated with a setting of 0 hours : 30 minutes. The express settings are set by default and can’t be changed by the user. So if they aren’t the settings you want, operation needs to be manually adjusted anyway. For that reason, I don’t think these express switches are useful. * There is also a Lock switch. When the Lock switch is touched, the various settings are locked; and the switches, with one important exception, are de-activated. The one exception is the On/Off switch, which remains active. Some customers have complained that once locked, the controls cannot be unlocked without turning the unit off or even unplugging the unit. But I found that if you touch and hold the Lock switch for a few seconds, it will unlock. * On my gas burner set on maximum flame, bringing 8.5 quarts of water to a full boil takes 27 minutes typically. (I set a kitchen timer and check the pot.) The induction cooktop on Power mode set to the maximum power level of 10 is a bit slower. On average, it takes 34 minutes. On my gas burner, enough steam pressure can build up to rattle the lid and let some water boil over if I do not turn down the flame. I typically turn down the flame to a slow boil, set a kitchen timer for 6 minutes, and then turn off the flame after the timer goes off. On the induction cooktop, there is no boil over even if I leave the power level at the maximum of 10. So that is an advantage of lower power. But typically once the water reaches full boil (I set a kitchen timer and check the pot after the timer goes off), I set the power level down to 5.0 and the Timer to 6 minutes. The water maintains a slow boil for 6 minutes and then turns off automatically. So the induction cooktop is more convenient than the gas burner for my task. * I haven’t had any issue with a loud high-frequency noise during operation, as some customers have complained about. But that may depend on your cookware and on what you are heating. * I’ve used this unit only about 8 times. So far, no problems. This unit was in good working order and in good cosmetic condition straight out of the box. I’ll provide an update should problems arise.

Got this cooktop for the Presto induction canner
At first I thought the unit was defective. It was shutting down towards the end of the canning cycle. I tried it twice and finally reached out to Duxtop. They were very responsive and explained that the cooktop will shut down after two hours if you don't use the cooktop timer. The third time I used the canner I set the cooktop timer and it worked perfectly. The cooktop is heavy duty and handles the canners weight. My element stove top would struggle. It's nice that it stays cool and it seem that without the extra heat from an element the entire canning process was cooler and more efficient. The main purpose of this cooktop was for canning but I've tried frying some eggs in a cast iron pan and it worked great. It seemed like the pan heated up much faster than a conventional element and the heat was easily controlled. The only noise from the cooktop is the fan, which isn't too loud. I couldn't hear any high pitch noise that I've read about in other reviews but I know some people can hear higher frequencies than others. This was a good purchase for my purposes and I'm sure I will use it a lot.
