Our "MM" culture is a blend of mesophilic cultures preferred for soft ripened and fresh (unripened) cheeses: Brie, Camembert, Havarti, Gouda, Edam, Feta, Blue, Chevre, etc. This culture creates a pleasant blend of lactic acid flavor and subtle buttery notes.
