Fresh brie or camembert in your kitchen
I looked into taking a Brie-making class but felt a cheese-making kit would be a better value. This one includes two stainless steel hoops, four plastic flipping boards, a cookbook, salt, and cheese-wrapping paper and labels, as well as a voucher to order the cultures whenever you're ready to get started. That's great, because this box could've sat on the shelf (or sat purchased and gift-wrapped for the holidays) for weeks or months, and the cultures need to be refrigerated and frozen. Mine arrived (from New Zealand) in one week after ordering them online.The kit itself is good quality and a better value than ordering each component individually. This company also often has special offers, so in my case, I was able to separately purchase the cheese aging box for 20% off both items, making the box nearly free. The cultures are also convenient, and each order includes enough to make five batches of brie or camembert (with two roughly 4" wheels of cheese per batch).The cookbook is awesome and covers everything from what the mold on the rind is to how it develops. There also are detailed instructions about the equipment you'll need (like pans and spoons), incubating, aging (and how it affects consistency), and every other step you could need to know, along with roughly a dozen recipes. Those include a ton of notes and guidance for newbies as to which ones are easiest and what to expect.Actually making the cheese is a blast! I chose the New World White, and the instructions were fairly clear. My curds looked just the way the book described as I spooned them into the hoops, and it was fun to flip them and watch them progress into something that actually looked like cheese. After unhooping, I salted the cheese and popped it into my wine fridge to dry. The cheese has to drain, dry, incubate, and ripen at different temperatures - all warmer than your kitchen refrigerator - so a wine fridge or other adjustable temp cooler will make this process much easier. After incubating and daily flipping for 10 days, the mold was fully grown around my cheese and it was wrapped and placed into the refrigerator to ripen (again, with daily airings, so this process is very hands-on). I cracked into the first wheel after about 22 days of ripening, and it was oozy and delicious! I made cheese!I've also emailed with the founder (Heather) and she was really enthusiastic and supportive - and gave me some great feedback. This kit makes the process of making brie and camembert fairly unintimidating and I'm thrilled with my results. Looking forward to more kits from this company in the future.

extremely easy and affordable
I have just recently purchased this kit and even though I have not made any cheese yet the book provided gives you tons of information and step by step instructions on how to make the cheeses. They also provide a voucher for the cultures that way you get super fresh cultures. Excited to make my Cambleu!!

You can't make brie with this kit.
Hello, I don't think this product does what it says. First, there is no recipe in the book for "brie" so "making brie" really isn't a good description. And, even for the recipe for "light brie" in the book calls for a 20 inch wide hoop! The kit provided just two small hoops. I already threw out the shipping box otherwise I'd return the two hoops and book. I doubt that I will ever use the supplied code for the ingredients. Pretty much a waste of $70.

Top notch company
This kit looks so amazing...just got the cultures two days ago...can't wait to get this process going...country trading CO is top notch when it comes to their customer service and their knowledge of the home cheese making ....very little invest needed outside of just the kit...and once I start with the basic I'll be dealing with them for all my needs....thanks guys....a perfect gift even if it's for yourself.!!!!!

Great kit but just didn’t work for us
This is a great kit but sadly our cheese was awful! Not sure where we went wrong so will try again. I’m sure it was our fault not the Kits! It’s quite fiddly and time consuming but a fun thing to try

Don’t bother buyingIt’s a box with a voucher which you send away for a bottle of renet that is then sent international mail from New ZealandAmazon does not fulfil the renet just an empty box

Culture Included – Fast Delivery
Bought this cheese kit as a gift for my sister and it comes with a voucher for free starter culture rennet and stuff. Voucher was easy to redeem, and it arrived in a couple of days. She is getting into it. Hope I get to eat some.
