Good Format, Good Recipes
I have tried several of the recipes in this book, and they have all come out very well. The kindle format is nice because you can drop down the individual recipes from the table of contents, which isn't the case for another of my kindle cook books. I personally find that to be a very convenient feature.It is true that these are not by and large low fat recipes, so if you are looking for low-fat fare, this isn't the book for you. However, on many of the recipes, you can reduce the fat content by using non-fat sour cream where called for, reduced fat cheeses and cream cheeses, and reduced fat butter/canola mix spreads as substitutes for the full fat items called for.There was one minor error in the Enchilada Bean Casserole recipe, but I didn't find it disruptive, I could easily intuit where the cumin needed to be added (the recipe lists the onions twice in the things to saute, it had to have been just a typo and cumin was what was meant). I have done seven of the recipes and found that to be the only error, and since it's easy enough to cope with, I don't feel like it detracts from the cookbook. However, it's good for others to know it's there as a potential cautionary note.And, even my husband, who loves his meat, has enjoyed all of the recipes I've prepared so far. So much so he hasn't even complained about the missing meat. That speaks a lot to me about the eat-ability of the recipes and has made it one of my go-to cookbooks at this time.

Large Collection at a Great Price!
I purchased this because I wanted a collection of vegetarian casseroles. That is exactly what I got. The recipes use ever day ingredients that are not hard to find and appear very easy to make. The table of contents is clickable. I will update my review after I make some of these.Note that this is not a vegan collection and the author uses things like butter, cream, and cans of cream of mushroom soups. Those don't bother me, but I wanted to get that out there so you don't have buyers remorse. A bit disappointed
I have 2 daughters who are vegetarians and I struggle to make things for them that are tasty and different. Although there are many delicious sounding recipes in this book, they all seem to have the same core ingredients or have high-fat ingredients. I was kind of shocked by that, actually. It feels like 100 variations on the same recipe to me. I'm not saying the recipes don't taste good, but more variety would be wonderful. There is more to eating than just beans, pasta and cheese. I was a bit disappointed.

Perhaps I'm a fool but I thought cookbooks were for people who liked to cook
This book is a total rip-off. Perhaps I'm a fool but I thought cookbooks were for people who liked to cook, but these recipes rely on canned soups, dried soup mixes, etc., and they are very unhealthy. So much for my other illusion, that vegetarian cooking is healthy. I've read more than a third of this cookbook and can't find a single recipe I'd cook for anyone. If you like butter and cream cheese, canned asparagus and corn, frozen carrots and spinach, this book is for you, but if you like fresh vegetables, olive oil, unusual seasonings, it's not.
