how long does puree keep once can is opened and how should it be stored after opening?

It is good for about three weeks to a month in the fridge before getting moldy. We just push the cover to the top of the remaining puree and cover with foil, blocking as much air as possible. The "Gourmet Chestnut spread from France with Vanilla" lasts much longer - must be the added sugar. That's the one to pick for spreading on croissants.
