The gel doesn't harden like Wilton icing, so it's not good for use as a glue.

This very watery, I wouldn’t use it for covering a cake

I would think just using green icing would be easier

You can, but please note that it is meant only as an accent and will not dry. It's best for writing names or sayings on cakes
