does this work on snake tanks?

Yes I use it primarily for my fridge and freezer compartments, so it definitely works in dry air environments. I have 6 of them and they all work perfectly.

How long do the batteries last about?

I've had mine for a year, still going. Although I turn it off when not using. I only turn it on when I want to get a temperature reading.

The "cable" is a thin wire. Mine is 36 1/2 " from thermometer to probe. It is quite accurate for the price. I'm happy with it. Enjoy your aquarium.

Can the probe stay submerged indefinitely?

Mine has been submerged for a month and is still perfect. It is designed to be in the water at all times.
