The cheese I’ve had are more salty, this isn’t, is it because it’s fresh?

I don't believe so. Kasseri is always a bit salty and adds to the unique taste

What are the ingredients?

75% sheeps milk; 25% goats milk

Cheese doesn't tend to spoil, but it will grow mold. I cut what I was going to use pretty quickly, then sliced the rest and froze it. I have done this in the past and it works out fine. It never stays in the freezer all that long, though.
