How many rifles can fit

I found that it could fit probably 5 or 6 rifles. The best way to fit as many as possible it have a piece of foam on the bottom and have another piece on the top with the rifles in the middle. Hope this answers your question.

can this fit two Colt M4s with Eotechs?

All day. I haven't seen your setups but M4's are pretty short. I don't think I've seen one over about 35" and the ID of this case is over 40". As long as they aren't all Ruben Goldberg you should be able to get them in there just fine.

Can you put an AR style rifle upright in this case? Can you do so with optics (like an ACOG) attached?

The inside dimensions are right about 40x12x12 (inches). The yes you are looking for depends on your configuration. If your setup profiles are discrete you might fit 4 across. If you absolutely can't get it done without the rail mounted proverbial kitchen sink, this case is not for you. I hope it works for you. It's an awesome case. It's the only case I trust for my antique, Victorian parasol collection!
