Rare whole grain product. Very difficult to find the milled grain, and here it is courtesy of Amazon. I could wish for bigger quantities such as 5lbs or since this is a product shipped from England 2 kilograms. Einkorn produces a different and delicious tasting bread. It does develop gluten, but of a kind that is different than the common type which makes the dough difficult to handle, but is far easier to digest. Excellent product. Immediate shipping.
